Abstract Litchi chicken soaking liquid consists of water, sauce, ginger, salt and small amount of seasoning protein, chicken powder, emulsifier, aniseed, fennel, cassia bark, clove, etc. Litchi chicken is prepared through the technological processes of butchering, scalding in 100 deg.c water for 2 min, stewing for 90 min, soaking in the said soaking liquid for 96 hr, roasting, vacuum packing, high pressure disinfection for 25 min, constant temperature culture for 7 days and packing.
