Abstract A high-output barm for brewing spirit is prepared from active yeast, rhizopus yeast, aspergillus niger, cellulase, oxidoreductase, beta-amylase, and flavouring yeast through porportioning, mixing, breaking, sieving and package. Its advantages are low cost, direct fermenting without pre-steaming, high spirit output increased by 30% or more, and rich nutrients in dregs (including 18 amino acids and 4 vitamines) used as feed.
