Abstract High quality red bean, after eliminating impurity, is soaked in water at 60 deg.c for 4-5 hr, screened to eliminate un-swelled bean, cooked, drip-dried, further sugar soaked at a temperature of 60 deg.c and under soaking pressure lowered below 1.0 kg/sq cm or vacuum state soaking thrice with sugar of different concentrations, then dripped to eliminate redundant sugar, packaged and disinfected into sugared red bean product. The said process can produce sugared red bean product with intact grain, bright color, homogeneous sugar content, delicious taste, and little nutritious component loss.
