Abstract A process for passivating plant protease in fruit includes such steps as immersing fruit in warm water, mixing with peroxyacetic acid, heat insulating in a heater, and further immersing in warm water. Its advantages include simple operation, short period, low investment and low energy consumption. It can be used in fruit beverage to prevent protein from floating up after it is stored for more than a year.
