Abstract A process for preparing pectinase features the waste fruit dregs generated during processing course of fruit and the waste beet dregs generated in producing beet sugar are used as carbon source and the inorganic nitrogen is used as nitrogen source, and includes such steps as inoculating Aspergillus niger PE1650, solid-state fermentation at 31-33 deg.C for 60-72 hr under the condition of touching air, and immersion extraction in running water. Its advantages include high output (1596 units/g) and rich protein in risidual dregs (16.7%).
