AbstractThe present invention relates to a method for producing stable dry powders which are insoluble in hot water and which contain one or more lipid-soluble vitamins an/or one or more carotenoids comprising the following steps: A)preparing an aqueous dispersion containing 2 to 50% by weight of at least one protein, 1 to 30% by weight of at least one sugar, 0.2 to 20% by weight of at least one inorganic salt, 0.1 to 20% by weight of at least one lipoid-soluble vitamin and/or at least one carotenoid and 5 to 95% of water, wherein all the percentage by weight are based on the total weight of the aqueous dispersion and the summation of percent of each ingredient is equal to 100%; B) translating the aqueous dispersion into dry powders; and C) heating the dry powders to 55-180 DEG C. Wherein the inorganic salt is alkali metal phosphates, so that the protein is cross linked to the degree of insoluble in water even when the powders are fed to hot water of 100 DEG C and are maintained at least 3 min.
