Abstract The present invention relates a health-care food, concretely, it is a fermented vegetable weight-reducing gruel and its production method. It is characterized by that it adopts various vegetables uppeared on daily dining table according to scientific reasonable mixing proportion as raw materials, and makes them undergo the process of lactobacillus and acetobater fermentation to remove water-soluble carbohydrates of partial monsosaccharide from raw material so that the internal fat can be fully combusted to raise weight-reducing speed. Besides, in the course of fermentation, a certain quantity of somatic cell and product of metabolism can be multiplicated at the same time, and thus it can induce organism to produce interferon and mitogen, activate NK cell, and promote production of immunoglobulin so as to raise immunity of human body.
