Abstract An instant soybean powder with increased content of soybean protein is prepared through cleaning, treating soybean with high-frequency electric field, immersing in water until its bud in just projected, grinding, sterilizing, emulsifying, concentrating and spray drying. Its advantages include high protein content (NSI=90%), high gemination rate and short sprouting period.
