Abstract Grains with proper amount of water is inoculated with raw material distiller's yeast in the amount of 0.5-1 % of grains weight for sealed fermentation at room temperature of 25-30 deg.c for 6-10 days, and the fermented material is then mixed with scented distiller's yeast, sealed and fermented for the second time. The present invention combines the advantages of traditional cooked material fermentation process with newly adopted raw material fermentation process and overcomes their demerits. Thus it has the features of simple technological process, high yield of spirit, short fermentation period, and high quality of spirit.
