AbstractThe high-protein instant noodles and common noodles are produced with whole soybean powder, wheat flour, xanthan gum, carrageenan and salt. During the production, soybean is first heated at 150-170 deg.c for 4-5 min, with coat being eliminated and ground into whole soybean powder and the said material is then produced through conventional process into instant noodles or common noodles. The product of the present invention has good taste, no fishy smell, rich nutrients and low cost.
