Abstract The drying method of spiced corned insect includes three steps of vacuum stirring evaporation, materials mixing and vacuum stirring drying in which the vacuum stirring evaporation is carried out under 500 mm Hg. and below 90 leg.C to evaporate until the water content of spiced corned insect is 75%, then mix the insect having 75% water content with wholly dried insect powder to form loose insect with water content less than 38%, the invented method can prevent the formation of sticky state when the water content is 75-40%. It is quick in drying speed, low in energy consumption and high in product quality.
