Abstract The present invention relates to vegetable processing technology. The present invention deodorizes garlic grains with magnetized deodorizing liquid comprising isoascorbic sodium 0.001-0.05 wt%, ethyl p-hydroxybenzoate 0.003-0.01 wt%, thiabenzimidazole 0.0001-0.0005 wt%, sodium tripolypholsphate 0.0001-0.001 wt% and trans-2-hexenoic acid 0.001-0.005 wt%. The said process can produce deodorized garlic grain with ideal deodorizing effect, good taste and low cost.
