Abstract The sweet potato food is produced through the steps of: storing sweet potato to saccharity first in long stack at over 2 deg.c and then in ditch overed with straw mat to control the temperature in 10-15 deg.c and relative humidify in 85-90 %; washing, steaming for 40-60 min and maintaining for 10-30 min; peeling after watering cold water to hot sweet potato; slicing into chip, strip or ball; and drying in the air. The food product is yellow, sweet and fragrant.
