Abstract Water melon paste is produced through fermentation of the material including water melon pulp, bean, pricklyash, flour and table salt. During the production, bean is first cooked and mixed with flour and the mixture is shelved for 2-3 days, sun dried and kneaded to eliminate flour and bean skin; water melon pulp is pounded into soap-like material, then said soap-like material can be mixed with the bean without skin, fresh pricklyash and salt to obtain second mixture; and the second mixture is finally fermented at 20-50 deg.c to obtain the invented water melon paste.
